Beautiful beers for people with beautiful souls

Pale Ales and IPAs

Mosaic Thump 5% - £15

A classic American Pale Ale, with a twist. Munich Malt adds a pleasant malty sweetness. Generous additions of Mosaic hops are used for both bittering and Aroma.

“Beer Official Intelligence: Mosaic Thump” – Apologies to De La Soul

Fermentation duties are taken care of by Nottinham Ale yeast.

Indigenous Yankee PA 6.4% - £21

A delicious well hopped American IPA with rich flavour and a lovely orange hue.  Originally called Nuggetzilla, Denali hops were re-named after Alaska’s highest peak (perhaps because of Trump’s attempt to change the name of the mountain back from the indigenous Athabasca), offer juicy fruit, pineapple, citrus and spice.  They are right on point for the newer style of less bitter but massively aromatic, juicy and tropical IPAs.

“I love the smell of hops in the morning – smells like victory!” – Apologies due to J Milius & FF Coppola

This is a complex beer containing Maris Otter, Cara and Biscuit malts.  It has flaked Barley to add body and head.  It is hopped with Denali hops.  Fermentation duties are taken care of by American Pale Ale yeast (US05).

Fruit Beers, Wheat Beers and Saisons

Craft Melb-A-le 5.5% - £15

A delicious fruity wheat-beer. Nuff said!

"Go Peachy, Go Peachy, Go Peachy! Yay! Woohoo!" – Princess Peach, Mario Strikers Charged Football (2007)

This sweet fruit beer uses Cara and Biscuit Malts to lend a rich malt backdrop to the full frontal fruit flavours of this lovely summer beer. The Peach-Melba-esque fruit flavours come from: the New Zealand Rakau hops; from the Peach, Apricot and Raspberries added to the beer; and from the use of Windsor yeast to ferment out the alcohol. Windsor yeast tends to leave a lot of sugars un-fermented and thus adds sweetness to the beer.

NB: You need to add your own fruit to this pack.

Smoked Cherry Ale 6.4% - £15

A strong complex red wheat beer with brandy-like almost medicinal qualities. Not for the faint hearted.

“I smoke as much as I want and chew tobacco a good deal of the time. I don't pay any attention to the rules for keeping in physical condition. I think they are a lot of bunk. The less you worry about the effect of tea and coffee on the lining of your stomach, the longer you will live and the happier you will be.” – Zack Wheat (US Major League Baseball player, elected to the National Baseball Hall of Fame in 1959, and consistent hitter throughout his 19-year career!

With the wheat malt backbone of a fairly traditional Belgian Witbier, this beer departs from the traditional by the inclusion of Maris Otter, smoked Rauch and Crystal malts for a full smoky malty flavour. The addition of cherries in the fermenter contribute the delicious flavours more often associated with cherry-brandy and sloe-gin. This beer can be drunk immediately but will become even more tasty after a few months in the bottle.

NB: You need to add 500g of fresh, tinned, jarred or frozen cherries to this recipe – the darker and more sour the better – Morello are best.

Saison of Satan II 6.66% - £16

A delicious well hopped Belgian Saison made with Bohemian Pilsner malt and Rakau hops. The special saison yeast imparts a funky, peppery character whilst the hops impart a wonderful, peachy fruitiness. A devilishly good beer!

“Now, now my good man, this is no time to be making enemies." - Voltaire on his deathbed in response to a priest asking him that he renounce Satan.

Brown Ales

Chestnut Brown Ale 5% - £17

A delicious American Brown Ale, with a nutty twist. A blend of Roasted Barley, Pale, Crystal and Biscuit malts give a full body and fuller flavour. The addition of Sweet Chestnuts adds a sweet, rich... well, umm... nuttiness... and an unexpected, but wonderful, thick almost viscous mouth-feel. East Kent Golding hops balance this beer’s richness and sweetness perfectly. This is a beer to go nuts over!

“Health nuts are going to feel stupid someday, lying in hospitals dying of nothing.” - Redd Foxx

Fermentation duties are taken care of by Safale S-04 which accentuates the sweet nutty flavours.

NB: You need to provide your own chestnuts for this recipe.

Porters and Stouts

The Black Perle Porter 5% - £15

A proper pirate of a Porter, tha knows!  This dark, smoky, bitter sweet porter is hopped using Perle hops – bred by German privateers at the Hop Research Institute in Hüll.

Will Turner: “This is either madness... or brilliance.”

Jack Sparrow: “It's remarkable how often those two traits coincide.”

Fermentation duties are taken care of by Safale S-04 English Ale yeast.

Chocolate Fountain 6.3% - £22

An enigmatic & delicious chocolate stout. Too dry to be a sweet stout and too sweet to be a dry stout. This stout has the mind of an IPA, the body of a bar of 70% chocolate and the heart of an outstanding classic stout. Are you ready for a beer this tasty? Are you ready for the truth?

“The artist needs to understand the truth that lies at the bottom of an enigma.” – John Maeda

Fermentation duties are taken care of by Safale S-04 English Ale yeast.

NB: You will need to supply some Vodka or other strong spirits in order to brew this beer.

Complex Beers for Expert Brewers

Wake and Bake Weizenbock 8% - £18

A strong dark German wheat beer brewed to the exacting standards of the Reinheitsgebot (Bavarian Purity Laws). Using a double decoction mash helps develop delicious malty flavours in this beer... and helps push up the strength of the beer - considerably. The double decoction produces abundant melanoidin compounds which lend the beer a rich bready bock-like taste and a thick mouthfeel. If fermented at a low temperature this will be accompanied by clean clove-like phenols. If fermented at higher temperatures banana-like esters will accompany the spicy clove flavours.

“Start the day off right with a wake and bake.” – Anon

Fermentation duties are taken care of by Munich yeast.
